Since having more free time I’ve been cooking and trying new recipes a lot more. The side dish I’m going to share with you today has been one of my recent favorites to cook. It’s full of flavor and can be paired with almost any main dish. This side consists of only four vegetables potatoes, onions, tomatoes, and orange peppers. Below are all the ingredients you’ll need to create this easy dish at home.
1 large onion
2 orange peppers
1 pack of potato seasoning of choice
2 tablespoons sugar
Pre-heat the oven to 400 degrees, and dice up all your peppers, tomatoes, and onion and place them in separate bowls.
Cut your potatoes however you like, I prefer mine in small wedges. Then grab a bowl big enough to fit all your potatoes, and place 2 tablespoons of corn oil in the bowl followed by the potatoes. Once the oil and potatoes are in the bowl add any kind of seasoning pack of choice. This time I used McCormack Garlic and onion potato seasoning. After all three ingredients are in the bowl mix them together until all the potatoes are covered in the seasoning. Once the potatoes are covered place them on a non-stick pan, and place in the oven for 30 minutes.
While the potatoes are baking I start the other veggies. You’ll need any kind of fry pan set on medium heat on the stove top. Place enough corn oil in the pan just to coat the bottom. First place your onions in and add two tablespoons of sugar. Let the onions cook at least 5 minutes by themselves then add in the tomatoes and peppers. It should take about 15-20 minutes for the vegetables to cook. They’ll start to look glazed when done.
The final step once the potatoes are done and golden brown and the vegetables are nice and glazed is to mix the two together in a big bowl. Once mixed serve and enjoy!
I absolutely love this side dish right now. I’ve changed it a little every time I’ve made it, and I finally feel like I’ve found the right mixture. I hope you try it at home as well. It only takes about 45 minutes to make. It can go with almost any main dish as mentioned before. You can see above I paired mine with rice and salmon.
